An Interview With Brooklyn Borough President Eric Adams

I've been inspired by Eric Adams work for a few years now. He successfully reversed his diabetes, helped his mother reverse her diabetes, both with a plant based diet. He transformed the New York City public schools to include Meatless Mondays and recently helped to eliminate processed meats from the school menu.

I heard Eric speak at a few events in New York. He is so awesome to hear in person. His story is quite impressive and will hopefully inspire those that are diabetic or sick with other diet related illnesses to change.

Another Race Tomorrow

I lost track on how many 5K races I've done. They really are a lot of fun, not that I don't enjoy longer races. It just feels like these races are a lot less pressure.

I know I'm ready as I train on the treadmill 4-5 days a week at speeds of 7-8 MPH. I love it when I tell others about the upcoming race. I'll get responses like "3 miles?", or "I can't even walk 3 miles". To me, it sounds like a breeze. I usually remind those who are surprised that I ran 13 miles a few months ago.

Here’s What A Plant Based Athlete Eats And Does For Workouts

After being plant based for over 3 years, a lot of people wonder what foods I eat and what I do for workouts,

For my workouts, I make sure I do a minimum of 10,000 steps a day. I wear my Apple Watch to remind me to stand one minute every hour. I also hit the gym 5 days a week.

I've Now Been Completely Plant Based For 3 Years

I know many of my vegan friends can related when I say that I wished I went vegan years ago. That being said, it is now my anniversary of being 100 percent plant based, as my last day of consuming animal products was on Sept. 6th, 2016.

I had been mostly plant based since 2012, but still relied on turkey, eggs and yogurt, along with all the fruits and veggies I was consuming. I cut out all the processed foods I was eating prior to 2012 and was feeling great. I was working out hard and getting results. I had lost the first 120 of my 150 pound weight loss within the first year.

One Year Since My Abdominoplasty

Wow, it's hard to believe it's been one year since my abdominoplasty (commonly known as a tummy tuck). This was a procedure that I put a lot of thought into and was something I waited 5 years to do. I have absolutely no regrets doing it, as I gained so much more confidence since then.

For 5 years after my incredible 150 pound weight loss, I worked hard trying to tighten my abs. I did everything, from machines that heat the skin as a way to tighten, special creams, wraps, you name it, I did it. It wasn't just the ugliness of the skin that bothered me, but also the irritation that went along with it. I would get itchy and irritated in that area. I also hated the flopping sound it would make when I ran as I would feel embarrassed by it.
