Vegan For Eight Years
It just occurred to me the other day that I have been officially vegan for over 8 years now. On September 6, 2016, I had my final meal with family and friends. It was Chicken Marsala. It was the beginning of what I thought would be a 13 week challenge, where my original intention was to go back to my old diet. I never went back to the old diet as I became an ethical vegan in the process.
I have learned a lot over the years of being vegan and would never choose to knowingly have animal products. There are so many plant based products out there that there is no reason in our society to not be vegan.
I am also whole food plant based. I eat this way as I want to maintain optimal health. It has worked for me... my left knee, when I had issues with it 4 years ago, was virtually pain free with my healthy diet. My orthopedist said I should have been in excruciating pain, but because of my anti-inflammatory diet, I didn’t have to deal with the pain.
I have a healthy blood pressure that averages around 100-110 over 65. Proof that hypertension can be reversed if caught early enough. I was also pre-diabetic... now I don’t even have to think about my blood sugar numbers. I also reversed neuropathy that I experienced from before I lost weight.
I know some people think it’s too much work to go vegan. Take it from me, it’s easy. If you just want to be ethical, and choose not to focus on whole food plant based foods, there are a ton of options for you in almost every store. For my whole food plant based friends, all you need to do is find some produce, beans and grains and you are ready to go! It can be extremely affordable as you are no longer buying the expensive meat.
